Precooling is the rapid removal of field heat from freshly harvested fruits and vegetables before shipping, storage, or processing. Prompt precooling inhibits growth of microorganisms that cause decay, reduces enzymatic and respiratory activity, reduces susceptibility to ethylene damage, and reduces moisture loss.
